Chicken Waldorf Salad Recipe

Ingredients

1 tablespoon unflavored gelatin

1/2 cup cold chicken stock

3/4 cup hot chicken stock

1/2 teaspoon salt

2 tablespoons lemon juice

1/4 cup unpeeled apple cored and diced

1/2 cup celery diced

1/4 cup chopped walnuts

1-1/4 cup diced cooked chicken

Salad greens

Directions

Soften gelatin in cold chicken stock then add hot stock and salt.

Stir until dissolved then add lemon juice and chill until gelatin begins to thicken.

Fold in apple, chicken, celery and walnuts.

Pour into lightly oiled loaf pan and chill until firm then unmold on crisp salad greens.
