Iced Tomato Soup

- 2 lb peeled, seeded, chopped ripe tomatoes shopping list
- 1 c chicken stock shopping list
- 1/4 c extra virgin olive oil shopping list
- 1/3 c aged wine vinegar shopping list
- 1 clove crushed garlic shopping list
- salt & pepper shopping list
- 4 tsp thick creme fraiche shopping list
- 12 small fresh basil leaves shopping list
How to make it
- Place the tomatoes, stick, oil, vinegar, garlic, salt and pepper in a food processor.
- Process on high for 2 minutes, or until smooth.
- Refrigerate until ready.
- Serve topped with a teaspoon of creme fraiche and some basil leaves.
