Ingredients
  • 2 large chicken breasts boned skinned and cut into thin strips
  • 16 large shrimp cleaned and deveined
  • Flour to dust shrimp and chicken
  • 1/2 cup olive oil
  • 2 teaspoons chopped garlic
  • 1/2 teaspoon salt
  • 1 teaspoon white pepper
  • 1 cup dry white wine
  • 4 cups sliced fresh mushrooms
  • 16 plum tomatoes cut into wedges
  • 1 teaspoon chopped fresh parsley
  • 1/4 cup clam stock
  • 1 pound fresh linguine cooked and held warm

Directions
  1. Dust chicken and shrimp with flour then set aside.
  2. In large sauté pan heat oil over medium heat.
  3. Add chicken and sear 1 minute on each side.
  4. Add shrimp and garlic then sauté stirring constantly 2 minutes turning shrimp after 45 seconds.
  5. Add salt, pepper and wine then cook to reduce for 2 minutes.
  6. Add mushrooms, tomatoes, parsley and stock then cook 2 minutes longer.
  7. Toss with hot pasta.
