Grandma Cooks Prickly Pear Cactus Jelly Recipe
This is my grandmother's recipe that I found in an old cedar recipe box. I have copied it exactly from the index card.

Ingredients
  • 35 good sized prickly pear fruits
  • 1/4 cup of fresh lemon or lime juice
  • 1 box pectin (fix according to directions on box)
  • 3.5 cups of sugar
  • (works best if made in small batches)

Directions
  1. Pick ripe red fruit with tongs or leather gloves
  2. singe off spines over fire
  3. wear leather gloves to rub off peel
  4. cut peeled fruit into quarters
  5. barely cover with water in large pot
  6. cook 20 minutes until real soft
  7. strain through folded cotton tea towel or four thicknesses of cheesecloth
  8. (the directions end there, but I assume that you would mix all the ingredients together and put it in jars)
