How to make it

  • Put the potatoes, yams and eggs into a pot and cover with cold water. Bring to a boil and cook till potatoes and yams are done.
  • At the same time melt butter in a frying pan and add the fillets, salting generously. Saute for a minute or two then add about 1/2 cup water and allow them to cook till flaky and done.
  • In the meantime, cut banana into slices and divide between two bowls.
  • Cut red onion into 1/2 chunks and add to bowl (you may use 1/2 the amount of red onion if you wish)
  • Cut avocado into 1/2 chunks and add to the bowls.
  • Take eggs, run under cold water, peel and slice into 4 wedges, add 1 egg per bowl.
  • Cut the potatoes and yams into 1/2 chunks add to bowls. Mix all ingredients in bowls till just mixed
  • Top with fish fillets cut into 1 inch chunks and drizzle with olive oil or flax oil.
  • Add fresh ground pepper and salt
  • Enjoy!
