Ingredients

2 whitefish fillets

2 eggs

2 medium yams (I like garnet yams for this recipe)

2 medium potatoes

1 small red onion

1 banana

1 avocado

1 T butter

olive oil or flax oil

salt and pepper

Directions

Put the potatoes, yams and eggs into a pot and cover with cold water. Bring to a boil and cook till potatoes and yams are done.

At the same time melt butter in a frying pan and add the fillets, salting generously. Saute for a minute or two then add about 1/2 cup water and allow them to cook till flaky and done.

In the meantime, cut banana into slices and divide between two bowls.

Cut red onion into 1/2 chunks and add to bowl (you may use 1/2 the amount of red onion if you wish)

Cut avocado into 1/2 chunks and add to the bowls.

Take eggs, run under cold water, peel and slice into 4 wedges, add 1 egg per bowl.

Cut the potatoes and yams into 1/2 chunks add to bowls. Mix all ingredients in bowls till just mixed

Top with fish fillets cut into 1 inch chunks and drizzle with olive oil or flax oil.

Add fresh ground pepper and salt
