How to make it

  • Glaze:
  • In a small saucepan, combine orange juice, cornstarch, brown sugar, allspice and cook, stirring until bubly. Cook two more minutes.
  • Hens:
  • Place an ice cream scoop of wild rice stuffing on a greased cooking sheet. Place 1/2 a hen over each scoop and brush cornish hens with some softened butter and orange glaze.
  • Bake at 350 degrees, continue brushing with glaze occasionally. Bake approximately 1 - 1 1/2 hrs until done. Cooking time depends on size of the hen.
