LEMON BRULEE TART

- 55g (2oz) butter or substitute like Utterly Buttery. shopping list
- 175g (6oz) ginger biscuits or cookies, crushed. shopping list
- 200g (8oz) carton full fat soft cheese. shopping list
- 115g (4oz) creamy plain fromage frais (8% fat) shopping list
- 3 tablespoons lemon curd. shopping list
- 55g (2oz) aster sugar. shopping list
How to make it
- Lightly grease a shallow 20cm (8in) round loose bottomed cake or flan tin; set aside.
- melt butter gently in a saucepan, remove from heat and mix in biscuit crumbs, press over base of prepared tin, chill whilst preparing filling.
- Put sot cheese, fromage frais and lemon curd in bowl; beat mixture together until smooth, creamy and well mixed.
- Spread cheese mixture over biscuit base in tin.
- Preheat grill to high.
- Sprinkle sugar evenly over the top of cheese mixture, then grill for about 3-4 min's, or until sugar caramelises to a golden brown colour.
- Allow to cool; chill for at least 1 hour before serving.
- Run a knife around edges of tart to loosen it before removing from tin.
- Place on a serving plate; cut into slices to serve.
- Serve with fresh fruit such as strawberries or raspberries.
