Ingredients
  • 55g (2oz) butter or substitute like Utterly Buttery.
  • 175g (6oz) ginger biscuits or cookies, crushed.
  • 200g (8oz) carton full fat soft cheese.
  • 115g (4oz) creamy plain fromage frais (8% fat)
  • 3 tablespoons lemon curd.
  • 55g (2oz) aster sugar.

Directions
  1. Lightly grease a shallow 20cm (8in) round loose bottomed cake or flan tin; set aside.
  2. melt butter gently in a saucepan, remove from heat and mix in biscuit crumbs, press over base of prepared tin, chill whilst preparing filling.
  3. Put sot cheese, fromage frais and lemon curd in bowl; beat mixture together until smooth, creamy and well mixed.
  4. Spread cheese mixture over biscuit base in tin.
  5. Preheat grill to high.
  6. Sprinkle sugar evenly over the top of cheese mixture, then grill for about 3-4 min's, or until sugar caramelises to a golden brown colour.
  7. Allow to cool; chill for at least 1 hour before serving.
  8. Run a knife around edges of tart to loosen it before removing from tin.
  9. Place on a serving plate; cut into slices to serve.
  10. Serve with fresh fruit such as strawberries or raspberries.
