How to make it

  • Lightly grease a shallow 20cm (8in) round loose bottomed cake or flan tin; set aside.
  • melt butter gently in a saucepan, remove from heat and mix in biscuit crumbs, press over base of prepared tin, chill whilst preparing filling.
  • Put sot cheese, fromage frais and lemon curd in bowl; beat mixture together until smooth, creamy and well mixed.
  • Spread cheese mixture over biscuit base in tin.
  • Preheat grill to high.
  • Sprinkle sugar evenly over the top of cheese mixture, then grill for about 3-4 min's, or until sugar caramelises to a golden brown colour.
  • Allow to cool; chill for at least 1 hour before serving.
  • Run a knife around edges of tart to loosen it before removing from tin.
  • Place on a serving plate; cut into slices to serve.
  • Serve with fresh fruit such as strawberries or raspberries.
