Yankee Pot Roast

- • 1 beef chuck roast (about 2 1/2 lbs.) shopping list
- • 3 MED,potatoes~~unpeeled and cut into quarters shopping list
- • 2 LARGE carrots~~cut into 3/4 inch slices. shopping list
- • 2 RIBS celery ~~cut the same as above. shopping list
- • 1 MED onion~~sliced shopping list
- • 2 bay leaves shopping list
- • 1 TSP, rosemary shopping list
- • 1/2 TSP. thyme shopping list
- • 1 beef BOULLION CUBE shopping list
- • 1 CAN REDUCED`~ SODIUM beef broth shopping list
How to make it
- IN CROCK POT:
- Heat 1/4 cup OLIVE OIL~~Cut INTO BITE SIZE CUBES~~chuck roast. DREDGE CUBES in flour with salt and pepper & brown. ADD 1 CUP WATER. ADD ALL VEGETABLES & BEEF CUBE. STIR WELL. ADD can of beef broth. SIMMER for about an hour or until vegetables are soft and meat is tender. Remove bay leaf. and serve
