Ingredients
  • • 1 BEEF CHUCK ROAST (about 2 1/2 lbs.)
  • • 3 MED,POTATOES~~unpeeled and cut into quarters
  • • 2 LARGE CARROTS~~cut into 3/4 inch slices.
  • • 2 RIBS CELERY ~~cut the same as above.
  • • 1 MED ONION~~sliced
  • • 2 BAY LEAVES
  • • 1 TSP, ROSEMARY
  • • 1/2 TSP. THYME
  • • 1 BEEF BOULLION CUBE
  • • 1 CAN REDUCED`~ SODIUM BEEF BROTH

Directions
  1. IN CROCK POT:
  2. Heat 1/4 cup OLIVE OIL~~Cut INTO BITE SIZE CUBES~~chuck roast. DREDGE CUBES in flour with salt and pepper & brown. ADD 1 CUP WATER. ADD ALL VEGETABLES & BEEF CUBE. STIR WELL. ADD can of beef broth. SIMMER for about an hour or until vegetables are soft and meat is tender. Remove bay leaf. and serve
