Smothered Okra

- 2 cups coarsely chopped green bell peppers shopping list
- 2 tablespoons vegetable oil shopping list
- 1 clove garlic finely minced shopping list
- 1/2 cup chopped onion shopping list
- 3 cups okra cut into 1/2" pieces shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Place peppers in a saucepan and add water to cover.
- Add salt and bring to a boil then cook for 1 minute and drain.
- Heat oil in a skillet and add the garlic and onion.
- When onion is wilted add the okra then sprinkle with salt and pepper.
- Cook stirring constantly for 10 minutes then add drained green peppers.
- Cover and cook briefly.
- The vegetables should be tender but they should retain a somewhat crisp texture.
