Summer Cold Cucumber Soup Recipe

Ingredients

1 cup low sodium chicken broth

1/2 cup chopped green onion

2 tablespoons of lemon juice

1 teaspoon sea salt

fresh chopped dill to taste

1/8 teaspoon garlic powder

1 cup non fat yogurt

1 cup sour cream

1&1/2 cups seeded diced cucumber

also good with additional fresh cilantro, chives or mint

Directions

Combine all ingredients in blender EXCEPT cucmber

blend until smooth and diced cucumber and chill 1 hour
