Summer Cold Cucumber Soup Recipe

Great summer soup for those hottest days of the year. Refreshing and very simple. I was
told it's Polish in origin.

Ingredients
- 1 cup low sodium chicken broth
- 1/2 cup chopped green onion
- 2 tablespoons of lemon juice
- 1 teaspoon sea salt
- fresh chopped dill to taste
- 1/8 teaspoon garlic powder
- 1 cup non fat yogurt
- 1 cup sour cream
- 1&1/2 cups seeded diced cucumber
- also good with additional fresh cilantro, chives or mint
Directions
- Combine all ingredients in blender EXCEPT cucmber
- blend until smooth and diced cucumber and chill 1 hour
