How to make it

  • Spray a non-stick pan with cooking spray and heat on medium high.
  • Add mushrooms and onions and stir until browned. Add 2 giant handfuls of spinach (don’t worry it will cook down). Toss spinach until wilted. Add in tomato.
  • Reduce heat to medium and add in egg whites and continue to stir until eggs begin to set.
  • Add feta cheese and continue to stir for about 30 more seconds and serve.

    Thanks. I'd never heard of eggoloy before. I used the Store Locator and found a Whole Foods near me that sells it.

    I made this for my husband, who I've been nagging about his cholesterol and he really enjoyed it. I usually buy free range organic eggs and have to separate the egg whites (and then I feel bad wasting the yolks). This saves me that step and is just as tasty and nutritious! Thanks again!

    This look like a great way to have eggs. I'm not a big egg fan but an on a diet that requires I eat them every morning. I'll try this tomorrow!
