I love these burgers! They're quick and easy to make and healthy too! Makes 6 burgers (enough for 3 people).

Ingredients
  • 1 potato (large egg sized). Cooked and mashed.
  • 1 large 415g can of salmon, drained
  • 1 stick or celery chopped
  • half onion chopped
  • 2 tbsp mayo
  • 1 tsp hot spice, chilli
  • 1 tsp paprika
  • chopped fresh corriander
  • salt and pepper
  • A few tbsps breadcrumbs for coating
  • 2 tbsp olive oil for frying

Directions
  1. Combine all the ingredients in a bowl.
  2. Shape into 6 patties.
  3. Roll in breadcumbs.
  4. Fry in oil on reasonable heat until browned.
  5. Serve with rice and veggies and wedge of lemon.
