Horn And Hardart Macoroni And Cheese Recipe
The Horn and Hardart was the first self-serve restaurant with locations in New York and Philadelphia. This was a staple dish, especially popular during the depression-only 15 cents for a serving!!

Ingredients
  • 1 1/2 Tbs butter
  • 2 Tbs flour
  • 1 1/2 cup milk
  • 2 Tbs light cream (milk will work)
  • 1 packed cup shredded cheddar cheese
  • 1/4 cup crushed tomatoes
  • 1/2 Tsp sugar
  • Dash cayenne pepper
  • Dash white pepper
  • Dash salt
  • 1/2 lbs. small elbow macaroni, cooked until barely done.

Directions
  1. In a small saucepan, melt the butter over low heat, blend in flour and cook about 2 minutes
  2. Beat in the milk, then the cream and cook over medium heat, stirring contently, until the mixture comes to the boil and thickens. Remove from heat.
  3. Stir in the cheese until melted, then the crushed tomatoes, sugar, salt and peppers.
  4. Stir in the macaroni.
  5. Pour in a shallow, buttered baking dish and bake in a preheated 400 degree oven until the cheese browns, 25 to 30 minutes.

My Father and Grandmother remember Horn& Hardart well. I even have a distant memory of going into "Town", Philly, and getting food there before going to the old Wanamaker's Dept Store at Christmas time. I will make this for them, and myself of course!
