How to make it

  • In a small saucepan, melt the butter over low heat, blend in flour and cook about 2 minutes
  • Beat in the milk, then the cream and cook over medium heat, stirring contently, until the mixture comes to the boil and thickens. Remove from heat.
  • Stir in the cheese until melted, then the crushed tomatoes, sugar, salt and peppers.
  • Stir in the macaroni.
  • Pour in a shallow, buttered baking dish and bake in a preheated 400 degree oven until the cheese browns, 25 to 30 minutes.

    My Father and Grandmother remember Horn& Hardart well. I even have a distant memory of going into "Town", Philly, and getting food there before going to the old Wanamaker's Dept Store at Christmas time. I will make this for them, and myself of course!
