Roasted Garlic Mashed Potatoes

- 1 bulb garlic, skin on shopping list
- 2 fl. oz. olive oil shopping list
- Pinch of kosher salt shopping list
- 1 lb. small red potatoes, scrubbed and cut into quarters shopping list
- 2 oz. butter shopping list
- 4 fl. oz. heavy cream shopping list
- kosher salt, and fresh ground black pepper, as needed shopping list
How to make it
- Cut top of garlic bulb off
- Place garlic in foil with olive oil and kosher salt
- Place packer in a 375 oven until garlic is golden brown
- Squeeze out roasted garlic and make a paste
- In a small sauce pan, cover potatoes with cold water seasoned with salt
- Bring the water to a boil and simmer until potatoes are fork tender
- Drain the potatoes and return to pot
- In a separate sauce pan scald cream with the butter
- Pour cream and butter mixture on top of potatoes, as needed
- Add roasted garlic paste, kosher salt and blk pepper as needed
- Mash with a fork just until incorporated
- Adjust seasonings
