How to make it

  • Cut top of garlic bulb off
  • Place garlic in foil with olive oil and kosher salt
  • Place packer in a 375 oven until garlic is golden brown
  • Squeeze out roasted garlic and make a paste
  • In a small sauce pan, cover potatoes with cold water seasoned with salt
  • Bring the water to a boil and simmer until potatoes are fork tender
  • Drain the potatoes and return to pot
  • In a separate sauce pan scald cream with the butter
  • Pour cream and butter mixture on top of potatoes, as needed
  • Add roasted garlic paste, kosher salt and blk pepper as needed
  • Mash with a fork just until incorporated
  • Adjust seasonings
