Hearty Mexican Stew

- 1 pound lean boneless pork, cut into 1 inch cubes shopping list
- 1 small onion, chopped shopping list
- 1/2 pound zucchini shopping list
- 1 16-ounce can of diced tomatoes shopping list
- 1 8-ounce can whole kernel corn, drained (try the mexi corn) shopping list
- 1 teaspoon sugar shopping list
- 1/2 teaspoon salt (optional) shopping list
- 1/4 teaspoon ground cumin shopping list
- 1/4 teaspoon chili powder shopping list
- 1/4 teaspoon garlic powder shopping list
- 1/4 teaspoon pepper shopping list
How to make it
- In a 2 quart microwavable casserole combine pork and onion.
- Microwave, covered, on high 5 to 7 minutes, stir.
- Reduce power to medium; microwave 5 to 7 minutes or until meat losses its pink color, stirring once after 4 minutes.
- Slice zucchini; halve large slices.
- Stir zucchini, un-drained tomatoes, corn, sugar, salt, cumin, chili powder, garlic powder, and pepper into pork mixture.
- Microwave, covered, on medium (50%) 25 to 35 minutes or until meat and vegetables are tender; stirring every 10 minutes.
- Let stand, covered, 10 minutes.
- Makes 4 servings.
