This is easy and tastes better than store bought, and if you use lean meat its healthier also!

Ingredients
  • 1 lb lean pork
  • 2 tbs fennel seed
  • 1/2 cup fresh whole basil leaves washed and dried
  • salt and pepper to taste - I like to use sea salt and pepper corns about 1/2 tbs of each
  • (if you want to spice it up add red pepper flakes)

Directions
  1. Cut pork into 1 inch cubes
  2. Put fennel seed, basil, salt and pepper into processor on high until basil is chopped.
  3. Add pork 1 cup at a time until ground
  4. Leave sausage whole or put into natural casings.

Well, that's a neat idea. I have a sausage grinder for venison but your way looks more practical. This looks good to me!
