This is a good recipie for company. It can be made a day ahead and kept in the fridge or weeks ahead and kept in the freezer until you are ready to heat it up!

Ingredients
  • 1 lb ziti
  • 1 1/2 sausage - homemade or store bought
  • 1 large container low fat ricotta
  • 1/2 cup parmesean or romano cheese
  • 4 cups mozzerella
  • 25 fresh basil leaves
  • 2 cloves garlic smashed and diced
  • 2 large onion small dice
  • 3cans diced tomoates
  • 1 container strained tomatoes
  • olive oil
  • Spray oil
  • salt and pepper to taste

Directions
  1. Drain Ricotta well and set aside
  2. Saute onions, 12 or 13 basil leaves and garlic in olive oil over medium heat.
  3. Remove and cook sausage over medium high heat until browned.
  4. Add onions mixture to sausage.
  5. Add cans of tomatoes with juice, strained tomatoes and reduce heat to medium.
  6. Cook for 30 to 40 minutes stirring often until sauce thickens and tomatoes darken.
  7. Add salt and pepper to taste.
  8. Add 1/4 cup parmesean cheese and 1/2 tsp salt and pepper to ricotta cheese and mix well set aside
  9. Boil Pasta until a dente and drain well.
  10. Spray bottom of large baking dish with cooking oil
  11. Place ziti in bottom of dish
  12. pour sauce over pasta evenly
  13. Divide the ricotta into 8 servings and place in dollops over the sauce.
  14. There should be one dollop for each serving so if you want to have more servings than 8 , then I would do ten dollops
  15. Press cheese mixture down so that its slightly flat
  16. Cover with the 4 cups of mozzerella cheese and then sprinkle the remaining 1/4 cup parmesean over the mozzerella
  17. put one basil leaf on top of each serving.
  18. Bake at 350 for 40 minutes or until cheese melts and is bubbly
  19. If you are in a hurry, you can substitute store bought sauce for the homemade, just saute the sausage and when its done add the jarred sauce.
