How to make it

  • Drain Ricotta well and set aside
  • Saute onions, 12 or 13 basil leaves and garlic in olive oil over medium heat.
  • Remove and cook sausage over medium high heat until browned.
  • Add onions mixture to sausage.
  • Add cans of tomatoes with juice, strained tomatoes and reduce heat to medium.
  • Cook for 30 to 40 minutes stirring often until sauce thickens and tomatoes darken.
  • Add salt and pepper to taste.
  • Add 1/4 cup parmesean cheese and 1/2 tsp salt and pepper to ricotta cheese and mix well set aside
  • Boil Pasta until a dente and drain well.
  • Spray bottom of large baking dish with cooking oil
  • Place ziti in bottom of dish
  • pour sauce over pasta evenly
  • Divide the ricotta into 8 servings and place in dollops over the sauce.
  • There should be one dollop for each serving so if you want to have more servings than 8 , then I would do ten dollops
  • Press cheese mixture down so that its slightly flat
  • Cover with the 4 cups of mozzerella cheese and then sprinkle the remaining 1/4 cup parmesean over the mozzerella
  • put one basil leaf on top of each serving.
  • Bake at 350 for 40 minutes or until cheese melts and is bubbly
  • If you are in a hurry, you can substitute store bought sauce for the homemade, just saute the sausage and when its done add the jarred sauce.
