Mushroom Garlic Chicken With Artichokes Recipe
This is delicious to serve with fettucini and a salad. Flavors marry well together.

Ingredients
  • 6 chicken breasts pounded to 1/4" thickness
  • Salt and pepper to taste
  • 3 tbsp butter
  • 8 garlic cloves Crushed. I just run my through a garlic press
  • 1 tbsp olive oil
  • 1/4 lb mushroom sliced
  • 1 14 oz can artichoke hearts drained and quartered
  • 2 tbsp dry marsla
  • 1 tbsp lemon juice

Directions
  1. Season chicken with salt and pepper. In a large frying pan, melt butter over medium heat.
  2. Add half of the garlic and cook for 1 minute.
  3. Add chicken and cook until lightly brown, about 3 minutes per side. Remove.
  4. In same pan add olive oil and remaining garlic cook 1 minute. Add mushrooms and cook until tender.
  5. Add artichokes and cook 1 minutes. Add marsala and lemon juice, bring to a boil. Stir until thickened, about 5 minutes. Pour over chicken.
  6. Serve with Pasta or Rice.
