How to make it

  • Cream butter and sugar, add egg and citrus rind. Beat until light and creamy.
  • Combine flour baking powder and salt. Add to creamed mixture, mixing just until smooth.
  • Divide dough into 4. Shape each into a roll 12'' long. Place 2 rolls on a greased or lined baking tray about 4'' apart. Flatten to 21/2'' width. Repeat with remaining rolls. Brush with milk and sprinkle almonds overtop, pressing in lightly.
  • Bake at 325F for 12 to 15 mins. or until edges are lightly browned. Cool.
  • ICING
  • Mix icing sugar with enough juice to make a smooth drizzling consistency. Drizzle over fingers. Let icing set then cut on diagonal into 1/2'' strips
