Super Sweet and Creamy Pumpkin Soup

- 1 kg of richly coloured butternut pumpkin shopping list
- 1 onion shopping list
- 4 cups chicken/beef or vegetable stock. shopping list
- 1 tablespoon sugar shopping list
- 2 teaspoons salt shopping list
- pepper shopping list
- 1 tablespoon butter shopping list
- 1/2 cup- 3/4 cup cream shopping list
How to make it
- Peel pumpkin and cut into pieces. Peel and chop onion.
- Place both in a large saucepan, add stock, sugar, salt, pepper and butter and cook until soft.
- Cool then place in a blender until smooth.
- Lastly add the cream and mix well (add more seasoning if needed).
- Heat but do not boil, serve immediately.
- Garnish with chopped parsley or nutmeg.
