How to make it

  • Peel pumpkin and cut into pieces. Peel and chop onion.
  • Place both in a large saucepan, add stock, sugar, salt, pepper and butter and cook until soft.
  • Cool then place in a blender until smooth.
  • Lastly add the cream and mix well (add more seasoning if needed).
  • Heat but do not boil, serve immediately.
  • Garnish with chopped parsley or nutmeg.
