Kindof an easy peasy no brainer--it's borderline "Sandra-Lee" it's nice and all your friends will be impressed! Mediterranean flavored rice salad with artichokes and couscous--side dish for fish!

Ingredients
- 2 boxes Near East Mediterranean rice mix
- 1 box couscous (no flavor)
- 1 jar marinated artichoke hearts
- 1 lemon
- salt and pepper.
Directions
- Cook the rice (use seasoning packets)
- Cook the couscous (don't use seasoning packets)
- When both are cooked mix them together in a large bowl
- Dice artichoke hearts and add to rice
- Zest and squeeze lemon over rice
- Salt and pepper to taste, mix, and refrigerate.
