Little Citrus Muffins

- 1 cup flour (all-purpose) shopping list
- 1/2 tsp baking powder shopping list
- 1/4 tsp baking soda shopping list
- 1/2 stick butter shopping list
- 2/3 cup sugar shopping list
- 1 egg shopping list
- 1/2 cup sour cream shopping list
- 1/2 tsp vanilla shopping list
- 2 tsp citrus zest (orange, lemon or lime) shopping list
- 2 Tbsp butter shopping list
- 1/3 cup sugar shopping list
- Mini-muffin pan with 24 cups shopping list
How to make it
- Soften the stick of butter and melt the 2 Tbsp butter. Keep them separate.
- Preheat oven to 375.
- Prepeare muffin pan by lightly spraying with cooking spray or by lining with miniature liners.
- Mix together flour, baking powder, baking soda and salt.
- In a large bowl, or your mixer bowl, mix the stick of butter and sugar together well.
- Add the egg and mix until smooth.
- Add sour cream, vanilla and zest and mix in.
- Add your flour mixture and mix until it is moistened, being careful not to overmix, which will ruin your muffins.
- Divide the batter between the 24 muffin cups.
- Bake for 12-13 minutes. Muffins should be light golden brown.
- Remove from oven and cool in pan 3 minutes, then remove from pan and cool slightly.
- Dip tops of warm muffins in the melted butter and then into the sugar (or sprinkle the sugar over).
- Nutrition info per original recipe: 260 calories, 12 g fat (7 g saturated), 60 mg cholesterol, 35 g carbohydrate, 3 g protein, 190 mg sodium, 0 g fiber.
