How to make it

  • Boil about a cup of large chunks of nopali cactus per person for about 10 minutes. Some people prefer to boil the paddles and then chop them up.
  • Rinse well.
  • While the nopalis are cooking chop the onions finely and coarsley chop chunks of tomatoes. Add the amount to suit your taste.
  • Mix the cooled chunks of nopali with the above.
  • Add oregano, fresh finely chopped cilantro, salt and pepper to taste. Mix well.
  • Add the balsalmic vinegar and olive oil and toss.
  • Sprinkle with freshly grated parmesan cheese and serve.
  • Some people like to cool it in the refrigerator for an hour or so.
  • Enjoy. :-)
  • The Nopali paddles have 14 calories per cup, very low in sodium and no fat.
