Ingredients
  • Nopali paddles
  • onions
  • tomatoes
  • cilantro (not too much)
  • oregano
  • pepper
  • olive oil
  • balsamic vinegar
  • freshly grated parmesan cheese

Directions
  1. Boil about a cup of large chunks of nopali cactus per person for about 10 minutes. Some people prefer to boil the paddles and then chop them up.
  2. Rinse well.
  3. While the nopalis are cooking chop the onions finely and coarsley chop chunks of tomatoes. Add the amount to suit your taste.
  4. Mix the cooled chunks of nopali with the above.
  5. Add oregano, fresh finely chopped cilantro, salt and pepper to taste. Mix well.
  6. Add the balsalmic vinegar and olive oil and toss.
  7. Sprinkle with freshly grated parmesan cheese and serve.
  8. Some people like to cool it in the refrigerator for an hour or so.
  9. Enjoy. :-)
  10. The Nopali paddles have 14 calories per cup, very low in sodium and no fat.
