How to make it

  • Whisk eggs, milk, soya sauce, and salt in a bowl.
  • Heat oil in a large skillet over medium heat.
  • Add mushrooms and bell pepper and season with salt and freshly ground black pepper.
  • Cook until vegetables are soft and the pan is almost dry.
  • Add tofu and cook until heated through.
  • Pour egg mixture into the pan.
  • Gently stir until eggs thicken and begin to set.
  • Sprinkle green onions over eggs and stir to incorporate.
  • Add cilantro, stir to combine, and remove from heat. Serve immediately.

    This sounds great. I always want to cook with tofu but I am usually befuddled at what to do with it. This is something I will try very soon!
