Mushroom Tofu Veggie Scramble

- 6 large eggs, beaten shopping list
- 2 tbsp milk shopping list
- 2 tsp thai sweet soya sauce shopping list
- 1/2 tsp salt shopping list
- 2 tbsp vegetable oil shopping list
- 1 c mushrooms, sliced shopping list
- 1/4 c red bell pepper, diced shopping list
- 1 1/4 c soft tofu, drained and crumbled shopping list
- 2 green onions, thinly sliced shopping list
- 1 tbsp cilantro, chopped shopping list
- salt and pepper shopping list
How to make it
- Whisk eggs, milk, soya sauce, and salt in a bowl.
- Heat oil in a large skillet over medium heat.
- Add mushrooms and bell pepper and season with salt and freshly ground black pepper.
- Cook until vegetables are soft and the pan is almost dry.
- Add tofu and cook until heated through.
- Pour egg mixture into the pan.
- Gently stir until eggs thicken and begin to set.
- Sprinkle green onions over eggs and stir to incorporate.
- Add cilantro, stir to combine, and remove from heat. Serve immediately.
