Mushroom Tofu Veggie Scramble Recipe

Ingredients

6 large eggs, beaten

2 tbsp milk

2 tsp thai sweet soya sauce

1/2 tsp salt

2 tbsp vegetable oil

1 c mushrooms, sliced

1/4 c red bell pepper, diced

1 1/4 c soft tofu, drained and crumbled

2 green onions, thinly sliced

1 tbsp cilantro, chopped

salt and pepper

Directions

Whisk eggs, milk, soya sauce, and salt in a bowl.

Heat oil in a large skillet over medium heat.

Add mushrooms and bell pepper and season with salt and freshly ground black pepper.

Cook until vegetables are soft and the pan is almost dry.

Add tofu and cook until heated through.

Pour egg mixture into the pan.

Gently stir until eggs thicken and begin to set.

Sprinkle green onions over eggs and stir to incorporate.

Add cilantro, stir to combine, and remove from heat. Serve immediately.
