Snapper Ceviche Recipe
Ceviche's are great, but it's a challenge to find one at your grocery store that doesn't contain lame ass fake crab meat.

Ingredients
  • 1/2 pound snapper meat, skinned and deboned, cut into 1/2' pieces
  • 1/2 green jalapeño, brunoise
  • 1/2 red jalapeño, brunoise
  • Juice of 2 limes
  • Juice of 1 lemon
  • 1 T minced cilantro
  • 1/2 t sugar
  • Kosher salt and pepper, as needed
  • Cilantro leaves, chiffonade (for garnish)
  • Tortillas

Directions
  1. Combine the snapper, jalapeño peppers, lemon juice, lime juice, cilantro, sugar, salt ad pepper, in a non reactive bowl
  2. Cover and place in the refrigerator to marinate for three to four hours or until the fish turns white and opaque
  3. Stir the mixture occasionally to evenly distribute the marinade
  4. Serve with some fresh deep fried flour tortillas

I've never heard of ceviche eaten with tortillas. where is this from?
