Snapper Ceviche

- 1/2 pound snapper meat, skinned and deboned, cut into 1/2' pieces shopping list
- 1/2 green jalapeño, brunoise shopping list
- 1/2 red jalapeño, brunoise shopping list
- juice of 2 limes shopping list
- juice of 1 lemon shopping list
- 1 T minced cilantro shopping list
- 1/2 t sugar shopping list
- kosher salt and pepper, as needed shopping list
- cilantro leaves, chiffonade (for garnish) shopping list
- tortillas shopping list
How to make it
- Combine the snapper, jalapeño peppers, lemon juice, lime juice, cilantro, sugar, salt ad pepper, in a non reactive bowl
- Cover and place in the refrigerator to marinate for three to four hours or until the fish turns white and opaque
- Stir the mixture occasionally to evenly distribute the marinade
- Serve with some fresh deep fried flour tortillas
