How to make it

  • Preheat oven at 350 F. Grease the pan/mold.
  • In a large bowl mix flour, sugar, cinnamon, baking powder, baking soda and salt
  • In another bowl mix eggs, oil and vanilla. Add carrots, applesauce, nuts, coconut, and pineapple (with the juice for extra moistness).
  • Slowly add the wet ingredients to the dry ingredients and mix together.
  • Put in pan/mold and leave it in the oven for 1 hour (more or less)
  • Frosting:
  • Beat cream cheese, butter/margarine and vanilla with a handhelf blender until its soft.
  • Then incorporate the powder sugar little by little until soft.
  • Put it on the cake once its cool
  • ****We usually decorate the cake with Pecan halves****
