Moms Carrot Cake

- 3 cups flour shopping list
- 2 cups brown sugar shopping list
- 2 tsps cinnamon (powder) shopping list
- 2 tsps baking powder shopping list
- 2 tsps baking soda shopping list
- 1 tsp salt shopping list
- 1 tsp vanilla (or as much as you like) shopping list
- 4 large eggs shopping list
- 1 1/4 cup of vegetable oil shopping list
- 2 cups shredded carrots shopping list
- 3/4 cup chunky applesauce shopping list
- 1 cup chopped nuts shopping list
- 1/2 cup shredded coconut shopping list
- 1 cup canned pineapple (chopped) <- with juice!
- Frosting: shopping list
- 3 oz. cream cheese shopping list
- 2 tbsps butter or margarine shopping list
- 1 tsp vanilla shopping list
- 1 1/4 cup powdered sugar shopping list
- ****Double the frosting if you make two cakes!***** shopping list
How to make it
- Preheat oven at 350 F. Grease the pan/mold.
- In a large bowl mix flour, sugar, cinnamon, baking powder, baking soda and salt
- In another bowl mix eggs, oil and vanilla. Add carrots, applesauce, nuts, coconut, and pineapple (with the juice for extra moistness).
- Slowly add the wet ingredients to the dry ingredients and mix together.
- Put in pan/mold and leave it in the oven for 1 hour (more or less)
- Frosting:
- Beat cream cheese, butter/margarine and vanilla with a handhelf blender until its soft.
- Then incorporate the powder sugar little by little until soft.
- Put it on the cake once its cool
- ****We usually decorate the cake with Pecan halves****
