Moms Carrot Cake Recipe

If she decides to bake one, she'll have to continue making them weekly for about two months cuz we just can't get enough! oh, and this recipe is good for 2 cakes =) Prep:20m Cook:1m Servings:2	Lvogensen

Ingredients

3 cups flour

2 cups brown sugar

2 tsps cinnamon (powder)

2 tsps baking powder

2 tsps baking soda

1 tsp salt

1 tsp vanilla (or as much as you like)

4 large eggs

1 1/4 cup of vegetable oil

2 cups shredded carrots

3/4 cup chunky applesauce

1 cup chopped nuts

1/2 cup shredded coconut

1 cup canned pineapple (chopped)

Frosting:

3 oz. cream cheese

2 tbsps butter or margarine

1 tsp vanilla

1 1/4 cup powdered sugar

****Double the frosting if you make two cakes!*****

Directions

Preheat oven at 350 F. Grease the pan/mold.

In a large bowl mix flour, sugar, cinnamon, baking powder, baking soda and salt

In another bowl mix eggs, oil and vanilla. Add carrots, applesauce, nuts, coconut, and pineapple (with the juice for extra moistness).

Slowly add the wet ingredients to the dry ingredients and mix together.

Put in pan/mold and leave it in the oven for 1 hour (more or less)

Frosting:

Beat cream cheese, butter/margarine and vanilla with a handhelf blender until its soft.

Then incorporate the powder sugar little by little until soft.

Put it on the cake once its cool

****We usually decorate the cake with Pecan halves****
