Lemon Meringue Tarts

- 1 pkg. frozen puff pastry shells (Pepperidge Farms) shopping list
- 1 (3-oz.) pkg lemon pudding and pie filling mix (cooking kind) shopping list
- 1 tsp. grated lemon peel shopping list
- 2 egg whites shopping list
- 1/4 cup sugar shopping list
How to make it
- Bake pastry shells according to package directions.
- Remove from baking sheet and cool on wire rack.
- Cook pudding mix according to package directions for pie filling.
- Stir in lemon peel and cool to room temperature.
- Spoon about 1/3 cup pudding into each pastry shell.
- Preheat oven to 325 degrees.
- Place egg whites in a bowl.
- Beat until frothy using electric mixer at high speed.
- Gradually add sugar, beating until soft peaks form.
- Spoon over pudding, sealing adges.
- Place on a baking sheet and bake 12 min. or until lightly browned.
- Remove from baking sheet and cool on a wire rack.
