Lemon Meringue Tarts Recipe
A small spin-off of the lemon meringue pie. These are really easy to serve.

Ingredients
  • 1 pkg. frozen puff pastry shells (Pepperidge Farms)
  • 1 (3-oz.) pkg lemon pudding and pie filling mix (cooking kind)
  • 1 tsp. grated lemon peel
  • 2 egg whites
  • 1/4 cup sugar

Directions
  1. Bake pastry shells according to package directions.
  2. Remove from baking sheet and cool on wire rack.
  3. Cook pudding mix according to package directions for pie filling.
  4. Stir in lemon peel and cool to room temperature.
  5. Spoon about 1/3 cup pudding into each pastry shell.
  6. Preheat oven to 325 degrees.
  7. Place egg whites in a bowl.
  8. Beat until frothy using electric mixer at high speed.
  9. Gradually add sugar, beating until soft peaks form.
  10. Spoon over pudding, sealing adges.
  11. Place on a baking sheet and bake 12 min. or until lightly browned.
  12. Remove from baking sheet and cool on a wire rack.
