How to make it

  • Heat up oven to 180 C.
  • Line a 20cm round baking tray with greased paper.
  • Sift flour, baking powder, cocoa powder in a large bowl.
  • Beat butter and sugar until fluffy.
  • Add eggs, one at a time, followed with vanila essence.
  • Add flour, bit by bit, alternating with milk.
  • Add mocha and coffee.
  • Continue beating dough in low speed until it's well mixed.
  • Pour dough into the baking tray and bake for 45 to 50 minutes.
  • Leave to cool on a wire tray before icing.
  • For the icing, add coffee to cocoa, stir until smooth.
  • Add vanilla and enough sugar to reach a spreading consistency.
  • Refrigerate until it thickens.

    I LOVE mocha -- I think even better than caramel. This looks wonderful! If you made THIS for your daughter's 2ND birthday, I can only imagine what she has to look forward to over the years!!
