How to make it

  • Cook couscous
  • Thaw veggies (if frozen) and lightly cook
  • Drain and rinse garbanzo beans
  • Mix onions, corn, peas, and carrots in a large bowl, then add 2/3 of the cooked couscous
  • Blend garbanzo beans, spinach, and cilantro into a puree
  • Add eggs and blend, one at a time
  • Add stuffing crumbs and blend
  • Combine all ingredients (including olive oil) and mix until nearly smooth
  • Add the remaining 1/3 couscous (this will serve to both bind ingredients together and add a delicious grainy texture)
  • Fry on stovetop in a bit of olive oil or grill. Burgers will have a green color due to the spinach and cilantro; cook until golden brown on both sides
  • Serve on a whole wheat bun with veganaise, tomato, romaine, and avacado slices
