Couscous Cilantro Veggie Burger

- 1/2 cup couscous shopping list
- 1 can garbanzo beans (chickpeas) shopping list
- 1 cup herb stuffing mix, mashed into crumbs shopping list
- 1.5 cups fresh or frozen veggies (corn, peas, carrots) shopping list
- 4 eggs shopping list
- 1 red onion, diced shopping list
- 1 clove garlic, minced shopping list
- 1 cup spinach, chopped shopping list
- 1 cup cilantro, chopped shopping list
- 1 tbsp olive oil shopping list
How to make it
- Cook couscous
- Thaw veggies (if frozen) and lightly cook
- Drain and rinse garbanzo beans
- Mix onions, corn, peas, and carrots in a large bowl, then add 2/3 of the cooked couscous
- Blend garbanzo beans, spinach, and cilantro into a puree
- Add eggs and blend, one at a time
- Add stuffing crumbs and blend
- Combine all ingredients (including olive oil) and mix until nearly smooth
- Add the remaining 1/3 couscous (this will serve to both bind ingredients together and add a delicious grainy texture)
- Fry on stovetop in a bit of olive oil or grill. Burgers will have a green color due to the spinach and cilantro; cook until golden brown on both sides
- Serve on a whole wheat bun with veganaise, tomato, romaine, and avacado slices
