When my oldest - Morgan - was little, and saw the quarter moon he would say: "The moon is hotdogs and the Stars are macaroni-n-cheese, an' I eat 'em in my mouf". This is was his favorite, and still is my husbands' favorite comfort food.

Ingredients
  • 2 boxes Macaroni and Cheese mix
  • 1 pkg hotdogs
  • 1 cup cheese crumbles, (chedder or 3 Cheese)
  • 1/2 cup butter
  • 1/4 cup plain bread crumbs or panko
  • 1/4 tsp pepper
  • 1/2 to 1 tsp paprika
  • about 2 Tbs. minced sweet onion

Directions
  1. Cook macaroni according to package direction, adding hotdogs cut in to bite sized pieces.
  2. Drain well and return to hot pot.
  3. Continue making macaroni according to the package using the 1/2 cup butter as apposed to the 1/4 cup called for.
  4. Add cheese crumbles and stir well.
  5. Combine bread crumbs, and spices, then add to Macaroni
  6. Add minced onion (if using dried minced onion soak in 1/4 warm water until reconstituted and then drain)
  7. Stir well and serve.

So sweet! That takes me back to when my dad used to make us dinner because my mom was working nights. (Must be a guy thing?! ^_^) Thanks for the recipe, I'm gonna try it with tofu hot dogs!
