Pumpkin Spice Muffins Gluten Free

- 2 eggs shopping list
- 1/4 cup canola oil (can use any oil) shopping list
- 1/2 cup honey shopping list
- 1/4 cup unsweetened applesauce shopping list
- 1 cup mashed, pureed pumpkin shopping list
- 1 1/2 cups brown rice flour shopping list
- 1/2 cup soy flour shopping list
- 1 teaspoon baking powder shopping list
- 1 reaspoon baking soda shopping list
- 1 teaspoon cinnamon shopping list
- 1/2 teaspoon allspice shopping list
- 1/4 teaspoon salt shopping list
- 1/2 cup raisins, dried currants, or chopped dates shopping list
- 1/2 cup nuts shopping list
How to make it
- Beat eggs well
- Add honey, oil and pumpkin. Stir.
- Add dry ingredients and mix well.
- Stir in raisins and nuts.
- Fill paper lined or geased muffin cups 2/3 full.
- Bake at 350 degrees for 20 minutes or until toothpick can be cleanly removed.
