Herbed Fresh White Cheese or Yogurt Cheese

- 1 cup firm fresh white cheese or yogurt cheese shopping list
- 2 tbsp. unsalted butter, softened shopping list
- 3 tbsp. Minced fresh herbs: parsley plus thyme, chives and tarragon; or parsley plus chives and oregano or basil; or parsley and dill or your own combination! shopping list
- 1 small to medium clove garlic, minced to a fine pulp shopping list
- salt to taste shopping list
- freshly ground white pepper, to taste shopping list
- drops of fresh lemon juice, to taste shopping list
- drops of Tabasco or other hot pepper sauce, optional shopping list
How to make it
- Beat the cheese with the butter until amalgamated to a cream, then stir in the remaining ingredients. Taste and add more of anything that you may feel may be needed. Let the spread mellow and develop flavour for an hour or two at room temperature before serving. Refrigerate leftover for up to 2 days.
