Ingredients
  • 1 cup firm fresh white cheese or yogurt cheese
  • 2 tbsp. Unsalted butter, softened
  • 3 tbsp. Minced fresh herbs: parsley plus thyme, chives and tarragon; or parsley plus chives and oregano or basil; or parsley and dill or your own combination!
  • 1 small to medium clove garlic, minced to a fine pulp
  • salt to taste
  • freshly ground white pepper, to taste
  • drops of fresh lemon juice, to taste
  • drops of Tabasco or other hot pepper sauce, optional

Directions
  1. Beat the cheese with the butter until amalgamated to a cream, then stir in the remaining ingredients. Taste and add more of anything that you may feel may be needed. Let the spread mellow and develop flavour for an hour or two at room temperature before serving. Refrigerate leftover for up to 2 days.
