Greek Shortbread Recipe
these yummy short bread are beautiful and buttery they are stuffed with nuts and a little cinnamon and keep very well for to a week in an air tight container

Ingredients
  • 200g of butter
  • 1cup icing sugar
  • 1teaspoon of orange rind finely grated
  • 1egg
  • 1egg yolk
  • 21/2cups plain flour
  • 1 1/2 teaspoons baking powder
  • 1teaspoon cinnamon
  • 250g blanched almonds toasted and chopped
  • a little extra icing sugar for dusting

Directions
  1. preheat oven to moderately slow about 160cand line baking tray with baking paper
  2. using electric beaters beat butter,sugar and rind in a small mixing bowl until light and creamy. Add egg and egg yolks,beating in thoroughly.
  3. transfer mixture to large mixing bowl. using a metal spoon fold in sifted flour, baking powder, cinnamon and almonds mix until well combined.
  4. shape level tablespoons of mixture into crescents shapes. place on baking tray and bake for 15 minutes or until lightly golden brown. stand for 5 minutes before transferring biscuits to wire rack to cool. while still warm dust with icing sugar. just before serving dust heavily with a little more icing sugar

These sound great - I love shortbread and these sound similar to the German Vanillekipferln (ground almond crescent cookies) that have been in my family for decades. Good post! Will try them soon!
