How to make it

  • Preheat oven to 450°F. Lightly brush baking sheet with olive oil.
  • Place fish fillets in the center part of parchment paper. .
  • Season the fish with a little salt and pepper.
  • Drizzle with a little olive oil and lemon juice.
  • Spread the butter, on top of the fish fillets top with tarragon, thyme and capers.
  • Fold the ends of parchment paper together and crimp along the sides to seal and create a packet.
  • Place the packet in the oven and bake fish for about 10 minutes.
  • Transfer fish packets to plates. Tear the parchment paper in the middle to release the steam.
