Pescatore Encartocho Recipe
This is so simple to make yet very classic in taste. This would complement a good pasta dish.

Ingredients
  • 2 tablespoons olive oil
  • 6 8-ounce fish fillets
  • 2 tablespoon butter
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh tarragon
  • 2 teaspoons chopped fresh thyme
  • 2 teaspoons chopped fresh oregano
  • 1 tablespoon chopped capers
  • Parchment Paper (cut into wrapping size for fish fillets)

Directions
  1. Preheat oven to 450°F. Lightly brush baking sheet with olive oil.
  2. Place fish fillets in the center part of parchment paper. .
  3. Season the fish with a little salt and pepper.
  4. Drizzle with a little olive oil and lemon juice.
  5. Spread the butter, on top of the fish fillets top with tarragon, thyme and capers.
  6. Fold the ends of parchment paper together and crimp along the sides to seal and create a packet.
  7. Place the packet in the oven and bake fish for about 10 minutes.
  8. Transfer fish packets to plates. Tear the parchment paper in the middle to release the steam.
