Cranberry Shallot Rangoons Recipe
Only by some stroke of magic did I conjure this up, and it is oh so good! A sweet, flavorful rangoon, great for appetizers or snacks to impress and surprise your friends!

Ingredients
  • 2 shallots, diced
  • 1 leek, diced
  • 1 celery stalk, diced
  • 2 tsp basil
  • 2 tsp thyme (beware! do not add to much thyme!)
  • 3 oz cream cheese
  • 1/2 cup dried cranberries
  • 2 tbsp olive oil
  • Wonton wrappers

Directions
  1. Mix shallots, leek, and celery into cream cheese using a spoon (do not use a blender!).
  2. Mix until veggies are evenly distributed.
  3. Add cranberries and mix until evenly distributed.
  4. Add basil and thyme, being careful not to add too much spice.
  5. When cream cheese mixture is smooth, use spoon to form small balls and place each ball inside of a wonton wrapper.
  6. Fold wontons up into a conclave shell.
  7. Number of rangoons will depend upon how big the balls are; use your judgment to create the right amount of rangoons.
  8. Warm olive oil on stovetop at medium to medium-high heat.
  9. Place wontons in the oil and fry until golden brown; flip several times and brown all sides.
  10. Serve immediately!

I don't think I had ever heard the term rangoon before referring to little dumplings like these. But these do sound fabulous!

They come out fried and are very similar to crab rangoons, which are a Chinese appetizer. I meant to take photos of them finished, but they literally got eaten too quickly!
