How to make it

  • Preheat oven to 350 F (180 C)
  • Mix together sugar, spices, salt, egg yolks and sour cream. *The original recipe touts the value of real unpasteurized cream that's gone sour but mentions that, in a pinch, commercial sour cream will do :) *
  • Sprinkle raisins with the flour and add to the sour cream mix.
  • Pour into the shell and bake about 25 minutes (insert a knife; if it comes out clean then the custard is set).
  • Just before the custard is done beat the egg whites until stiff peaks form.
  • Mix 2 Tbsp. of the remaining sugar with the cinnamon and add to the egg whites, beating together until glossy and stiff.
  • Fold the balance of the sugar into the egg whites.
  • Spread egg whites over the hot custard , return to the oven and brown lightly.
