Kansas Corn Scallop

- 1 (12-16 oz.) can whole kernel corn shopping list
- 2 eggs shopping list
- 1 (1-lb.) can cream style corn shopping list
- 1 small can (2/3 cup) evaporated milk shopping list
- 4 Tbsp. (1/2 stick) butter or margarine, melted shopping list
- 2 Tbsp. instant minced onion shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. black pepper shopping list
- 2 Cups saltines, coarsely crushed shopping list
- 1 (12-oz.) pkg. process swiss cheese, diced shopping list
How to make it
- Drain liquid from whole kernel corn into a cup.
- Beat eggs slightly in a large bowl; stir in corn and 1/4 cup of the liquid, cream style corn, evaporated milk, melted margarine or butter, onion, salt and pepper.
- Fold in saltines and diced Swiss cheese.
- Spoon into a greased 8-cup baking dish. Bake in a slow (325 degrees) oven for 1 hour or until set.
- Let stand 5 minutes before serving.
