Kansas Corn Scallop Recipe
A friend I worked with who was from Kansas, gave me this recipe to try. It was great. The Swiss cheese just gave it a different bite.

Ingredients
  • 1 (12-16 oz.) can whole kernel corn
  • 2 eggs
  • 1 (1-lb.) can cream style corn
  • 1 small can (2/3 cup) evaporated milk
  • 4 Tbsp. (1/2 stick) butter or margarine, melted
  • 2 Tbsp. instant minced onion
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 Cups saltines, coarsely crushed
  • 1 (12-oz.) pkg. process Swiss Cheese, diced

Directions
  1. Drain liquid from whole kernel corn into a cup.
  2. Beat eggs slightly in a large bowl; stir in corn and 1/4 cup of the liquid, cream style corn, evaporated milk, melted margarine or butter, onion, salt and pepper.
  3. Fold in saltines and diced Swiss cheese.
  4. Spoon into a greased 8-cup baking dish. Bake in a slow (325 degrees) oven for 1 hour or until set.
  5. Let stand 5 minutes before serving.
