Bleu Cheese n Bacon Beef Tenderloin with Garlicky New Potatoes

- 3 pounds tenderloin beef -- (3 to 4) shopping list
- 3/4 pound good sliced bacon -- more as needed shopping list
- 1/2 cup teriyaki sauce shopping list
- 1/2 cup red wine shopping list
- 1 tablespoon good balsamic vinegar shopping list
- 6 cloves roasted garlic (set 2 T minced garlic aside) shopping list
- 2 green onion -- white and 1" green, minced shopping list
- 1 tablespoon hickory salt shopping list
- Fresh cracked black pepper to taste shopping list
- 4 ounces blue cheese -- crumbled shopping list
- 1/2 cup mayonnaise shopping list
- 2/3 cup sour cream shopping list
- 1 1/2 teaspoons worcestershire sauce shopping list
- 2 lbs small red potatoes, cut in half shopping list
- sprig of fresh rosemary shopping list
How to make it
- MARINADE and TENDERLOIN
- Heat gas grill with one side hot and one side medium, or, all charcoal on one side of grill
- Combine, teriyaki sauce, red wine& balsamic vinegar, garlic and green onion.
- Set 1/4 c aside
- Pour remaining mixture over beef and allow to marinate for at least 30 minutes turning at least once.
- Heat gas grill with one side hot and one side medium, or, all charcoal on one side of grill
- Wrap tenderloin in bacon, securing with toothpick if needed.
- Place tenderloin on hot grill for 15 minutes, turning 4 times
- Move to medium grill and cook for 30 to 40 minutes longer, turning 4 times, removing at 130 degrees internal temp.
- Salt and pepper beef at this time, if desired.
- Allow to set for approximately 5 to 10 minutes before slicing.
- Be sure to leave bacon on when slicing.
- BLEU CHEESE SAUCE
- In a saucepan over low heat, combine the bleu cheese, mayo, sour cream and Worcestershire sauce. Stir until smooth and creamy and serve over the sliced tenderloin.
- NEW POTATOES
- Add 2 T minced garlic to the reserved marinade, along with a little more (2 or 3 T) of each ingredient.
- Put it in an iron skillet with a sprig of rosemary and small red potatoes and let them simmer while the meal cooks.
- ** Be careful because garlic and bleu cheese can be overpowering for some.
