Herby Salmon Brochettes Recipe
Here is another quick marinade for fish. It is so easy and looks so elegant your guest will think you worked really hard to cook for them. Fish comes out moist, tender and flavourful.

Ingredients
  • 1 lb salmon, skinned, deboned and cube to 1 inch pieces
  • 1/2 c of fresh lemon juice
  • 1/4 c olive oil
  • 2 garlic cloves, minced
  • 1/4 parsley
  • salt and pepper to taste
  • 4 wooden skewers, soaked in water

Directions
  1. Combine lemon juice, oil, taragon, garlic and pepper and pour on salmon in ziploc bag or baking dish. Refrigerate for 15 minutes.
  2. Remove skewers from water.
  3. Thread on salmon.
  4. Grill for 10 to 12 minutes.
  5. Salt to taste during the last 5 minutes of cooking.
  6. Serve with rice pilaf and veggie skewers.
  7. For the veggie skewers, I usually use mushrooms, peppers, zucchini, onions and grape tomatoes in the same type of marinade.
