Herby Salmon Brochettes

- 1 lb salmon, skinned, deboned and cube to 1 inch pieces shopping list
- 1/2 c of fresh lemon juice shopping list
- 1/4 c olive oil shopping list
- 2 garlic cloves, minced shopping list
- 1/4 parsley shopping list
- salt and pepper to taste shopping list
- 4 wooden skewers, soaked in water shopping list
How to make it
- Combine lemon juice, oil, taragon, garlic and pepper and pour on salmon in ziploc bag or baking dish. Refrigerate for 15 minutes.
- Remove skewers from water.
- Thread on salmon.
- Grill for 10 to 12 minutes.
- Salt to taste during the last 5 minutes of cooking.
- Serve with rice pilaf and veggie skewers.
- For the veggie skewers, I usually use mushrooms, peppers, zucchini, onions and grape tomatoes in the same type of marinade.
