an easy vegetable cheese pie that can stand alone as a luncheon dish or serve as a great prepare ahead picnic pie. the recipe comes from a neighbor of my in-laws' in Southwind Park of Palm Harbor, Florida.

Ingredients
  • 2 cups chopped broccoli or cauliflower
  • 1 small onion, chopped
  • 1/2 chopped green pepper
  • 1/2 chopped red pepper
  • 1 cup shredded cheddar cheese
  • 1 1/2 cup milk
  • 3/4 cup bisquick mix
  • 3 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Directions
  1. heat oven to 400 degrees F.
  2. butter 10" pie plate
  3. boil broccoli and/or cauliflower 5 min, drain
  4. mix boiled broccoli, onion,peppers,and cheese in pie plate
  5. blend remaining ingredients for 15 seconds in blender or mix until smooth
  6. pour over vegetables
  7. bake 40 min
  8. let stand at least 10 minuites before cutting
