Ingredients
  • 5 green bell peppers, finely diced
  • 5 red bell peppers, finely diced
  • 2 large green tomatoes, finely diced
  • 2 large sweet onions, finely diced
  • 1/2 small cabbage, finely diced
  • 1/4 cup pickling salt
  • 3 cups sugar
  • 2 cups white vinegar
  • 1 cup water
  • 1 Tab. mustard seed
  • 3/4 tea. turmeric
  • 1 1/2 tea. celery seed

Directions
  1. Place veggies in a large dutch oven. Add salt, cover and chill overnight.
  2. Rinse and drain; return mixture to dutch oven.
  3. Add remaining ingredients
  4. Bring to a boil
  5. Reduce heat
  6. Simmer 3 minutes
  7. Using sterilized ladle and funnel, pack hot chochow into hot sterilized half pint jars. Fill to 1/2" of top. Remove air bubbles, wipe jar rims.
  8. Cover at once with metal lids and screw on bands
  9. Process in boiling-water bath for 15 minutes

I agree with All of the above! Until you have tried all of the above, the chow-chow, beans, hot crispy cornbread, sweet onion, etc., you just don't know what you are missin'. Glad I was introduced to this "early on". :) Wonderful!


Eat this quite often helped my mother make it as a child{Thanks bunches lost her recipe now I have it.
