How to make it

  • Place veggies in a large dutch oven. Add salt, cover and chill overnight.
  • Rinse and drain; return mixture to dutch oven.
  • Add remaining ingredients
  • Bring to a boil
  • Reduce heat
  • Simmer 3 minutes
  • Using sterilized ladle and funnel, pack hot chochow into hot sterilized half pint jars. Fill to 1/2" of top. Remove air bubbles, wipe jar rims.
  • Cover at once with metal lids and screw on bands
  • Process in boiling-water bath for 15 minutes

    I agree with All of the above! Until you have tried all of the above, the chow-chow, beans, hot crispy cornbread, sweet onion, etc., you just don't know what you are missin'. Glad I was introduced to this "early on". :) Wonderful!
