How to make it

  • Cook the chicken on the stovetop in 1 cup water with a coarsely chopped onion for 20-25 minutes until done.
  • Drain chicken.
  • Save water to use in cooking rice.
  • Shread chicken with two forks. Set Aside.
  • Mix sauce ingredients together.
  • Butter a 7 X 11 baking dish.
  • Break tortillas into bite sizes.
  • Layer tortillas-sauce-chicken-tortillas-sauce-chicken, etc. 3 times.
  • Top with grated cheese.
  • Bake at 350 F 1 1/2 hrs uncovered.
  • Serve with a nice crispy salad.
