How to make it

  • Roast walnuts on baking sheet for 10 minutes @ 350
  • Split pomegranates in half, saving juice
  • Pass remaining fruit through a sieve (some seeds should pass through)
  • Toss pomegranate juice with the remaining ingredients
  • Garnish with pecorino and pomegranate seeds
  • I suggest wearing gloves when juicing pomegranate. It can stain hands

    this sounds great, and Alton Brown,I caught a show of his recently where it was all about the pomegranate, which oddly enough I just put a smooth recipe with this amazing fruit (though I used the juice only) - I guess great minds think alike... you got my high five! thanks for sharing....
