Walnut And Pomegranate Salad Recipe

Ingredients

2 pomegranates

2 bunches arugula, cleaned

1/2 cup walnuts

1/2 cup walnut oil

2 oz.. pecorino romano cheese, shaved

Directions

Roast walnuts on baking sheet for 10 minutes @ 350

Split pomegranates in half, saving juice

Pass remaining fruit through a sieve (some seeds should pass through)

Toss pomegranate juice with the remaining ingredients

Garnish with pecorino and pomegranate seeds

I suggest wearing gloves when juicing pomegranate. It can stain hands
