Another Houston Chronicle recipe 1/17/96. I don't think it's on the menu at Magnolia Bar & Grill anymore, but it's on our menu at home OFTEN. The yogurt/lime mayo is super easy and I use it separately for any chick/fish that needs dressing up.

Ingredients
  • Yogurt Lime Mayo:
  • 1/2 c plain yogurt - ok fatfree or lowfat
  • 1/2 c cream - ok nonfat
  • 1 lime's juice
  • Fish Tacos:
  • 1 c seasoned milk (season milk w/ dried dill, louisiana hotsauce, s&p - all up to you on amount)
  • Flour for dredging
  • 12 2oz. pieces fish fillets (catfish, crappie, bass, snapper)
  • Oil for deep frying - depends on size of your deep fryer
  • 12 8 inch flour tortillas
  • 1 c Yogurt Lime Mayo
  • 4 oz ea shredded green & purple cabbage (optional)
  • 12 lime twists (optional)

Directions
  1. Yogurt Lime Mayo:
  2. Combine all ingredients & whisk until smooth - for variation try chopped cilantro after whisking
  3. Fish Tacos:
  4. Heat oil to 375 degrees in fryer or deep pot.
  5. Place seasoned milk in med bowl.
  6. Dip fish pieces in seasoned milk.
  7. Then coat in flour.
  8. Then deep fry until golden.
  9. Drain on paper towels.
  10. (I like to lightly heat my tortillas, but recipe doesn't call for it)
  11. Coat each tortilla w/ Yogurt Lime Mayo.
  12. Divide Fish among tortillas.
  13. Top w/ cabbage & lime twist.
