Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 cup quick oats (NOT instant)
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 1/2 tsp cinnnamon
  • 1/4 tsp ground cloves
  • 2 tsp grated lemon zest (1 lemon)
  • 1 cup dark brown sugar (packed)
  • 3/4 cup butter softend ( 1 1/2 sicks)
  • 1 egg
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey
  • 1 cup fresh apple peeled and finely chopped (1 apple)
  • 1 cup raisins
  • Topping- 1/2 cup oats

Directions
  1. preheat oven to 300 degrees F
  2. in Med size bowl mix flour, oats, salt, soda, cinn, cloves, & zest.Set aside.
  3. with electric mixer, cream the butter and sugar together in a large bowl. Now add applesauce, egg, & honey. Beat at medium speed until smooth.
  4. Add the flour mixture, fresh apple, & the raisins, blend on low speed until just incorperated. DON"T OverMix! Dough will be soft.
  5. Drop rounded tablespoons 1 1/2 inches apart onto ungreased cookie sheets
  6. Sprinkle cookie with oats
  7. Bake 19-22 minutes until bottoms are golden

Made these yesterday and super recipe, recommend not to make when humid out, they did not dry up, they are very very soft, any suggestions????
