Bake Sale Fruitcake

- 4 oz margarine shopping list
- 6 oz sugar (brown or white, your choice) shopping list
- 6 oz raisins shopping list
- 6 oz currants shopping list
- 2 oz candied peel shopping list
- 8 oz water shopping list
- 2 eggs, beaten shopping list
- Pinch of salt shopping list
- 1 tsp baking soda shopping list
- 1 heaping teaspoon mixed spices (cinnamon, nutmeg, allspice) shopping list
- 4 oz all-purpose flour shopping list
- 4 oz self-rising flour shopping list
How to make it
- Preheat oven to 375F/180C/Gas Mark 4
- In a saucepan over med heat put water, margarine, sugar, spices, salt and dried fruit and bring to a boil.
- Redice to a simmer for one minute.
- Allow to cool in a large mixing bowl.
- After cooling add eggs, baking soda and flours.
- Mix well.
- Grease and flour 2 medium 1 lb. loaf tins (or line with baking parchment).
- Divide batter into tins and bake for 90 minutes or until toothpick inserted into center comes out clean.
- Cool for 20 minutes then turn out onto wire racks until completely cool before slicing and serving.
- For cranberry loaf, use 8 oz dried cranberries instead of dried fruit listed above.
