How to make it

  • Preheat oven to 375F/180C/Gas Mark 4
  • In a saucepan over med heat put water, margarine, sugar, spices, salt and dried fruit and bring to a boil.
  • Redice to a simmer for one minute.
  • Allow to cool in a large mixing bowl.
  • After cooling add eggs, baking soda and flours.
  • Mix well.
  • Grease and flour 2 medium 1 lb. loaf tins (or line with baking parchment).
  • Divide batter into tins and bake for 90 minutes or until toothpick inserted into center comes out clean.
  • Cool for 20 minutes then turn out onto wire racks until completely cool before slicing and serving.
  • For cranberry loaf, use 8 oz dried cranberries instead of dried fruit listed above.
