How to make it

  • Rinse peas and pick over for bad or discolored peas and small stones; transfer to a large size pot.
  • Cover with water and bring to a boil.
  • Reduce heat to a simmer and continue cooking for 5 minutes.
  • Pour off this water and rinse again.
  • Add more water to pot , enough to cover peas about 2 1/2 inches and add salt pork and onions.
  • Bring to a boil, reduce heat to medium and simmer, covered, for about 1 hour.
  • Uncover and cook for 3 to 4 hours, or until peas are tender.
  • Add more hot water as needed.
  • When the peas are tender stir in the salt.
  • Serve with Mamma's cornbread and collard greens.

    What I would do for just one more dinner at grandma's house. Cornbread, black eyed peas, collard greens, chicken & dumplings, peach cobbler and iced tea. My grandmother was such a wonderful woman. Happy new year to you Gem.
