Now this is some down home cookin'! Serve it with corn bread and collard greens and you can just imagine yourself in grandma;s old timey kitchen with this cookin' on the wood stove.

Ingredients
  • 2-16 oz. bag black eyed peas
  • Chunk of salt pork, about 6 oz.
  • 1 C. chopped onion
  • 3 tsp. salt, or to taste

Directions
  1. Rinse peas and pick over for bad or discolored peas and small stones; transfer to a large size pot.
  2. Cover with water and bring to a boil.
  3. Reduce heat to a simmer and continue cooking for 5 minutes.
  4. Pour off this water and rinse again.
  5. Add more water to pot , enough to cover peas about 2 1/2 inches and add salt pork and onions.
  6. Bring to a boil, reduce heat to medium and simmer, covered, for about 1 hour.
  7. Uncover and cook for 3 to 4 hours, or until peas are tender.
  8. Add more hot water as needed.
  9. When the peas are tender stir in the salt.
  10. Serve with Mamma's cornbread and collard greens.

At what stage do you add in the salt pork?


What I would do for just one more dinner at grandma's house. Cornbread, black eyed peas, collard greens, chicken & dumplings, peach cobbler and iced tea. My grandmother was such a wonderful woman. Happy new year to you Gem.
