Confetti Carrot Fritters

- 6 cups water shopping list
- 2 1/2 cups finely chopped carrots shopping list
- 1/4 cup flour shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 2 eggs, separated shopping list
- 3 tablespoons milk shopping list
- 2 tablespoons finely chopped onion shopping list
- 2 tablespoons minced fresh parsley shopping list
- vegetable oil for frying shopping list
- mustard Sauce: shopping list
- 1 tablespoon minced parsley shopping list
- 1 tablespoon red wine vinegar shopping list
- 1 tablespoon Dijon mustard shopping list
- 1 teaspoon finely choppped green onion shopping list
- 1/4 cup olive oil shopping list
How to make it
- In a saucepan, bring water to a boil.
- Add carrots; cover and boil for 3 minutes. Drain and immediately
- place carrots in ice water.
- Drain and pat dry.
- In a large bowl, combine the flour, salt and pepper. Combine egg yolks and milk; stir in teh onion, parsley and carrots. In a mixing bowl, beat egg whites on high speed until stiff peaks form; fold into batter.
- In an electric skillet, heat 14/ inch of oil on medium heat. Drop batter by 1/2 cupfuls; press lightly to flatten. Fry until golden brown, about 2 minutes each side. Remove to paper towel to drain.
- For the mustard sauce, in a small bowl, combine the parsley, venegar, mustard and green onion. Slowly whisk in oil until blended. Serve with fritters.
