How to make it

  • Grate Swiss and mozzarella; combine, and add Parmesan. Set aside.
  • Mince onion and slice mushrooms.
  • Peel shrimp and toss with Creole seasoning.
  • Melt 2 T butter over medium heat; add vegetables, marjoram, and white pepper.
  • Cook, stirring occasionally, until vegetables are tender.
  • Meanwhile, in another pan, melt 1 T butter; add shrimp and saute until shrimp are pink.
  • Add shrimp and olive oil to mushroom mixture and heat through on low heat, stirring.
  • Heat tortillas in microwave, 10 seconds per tortilla.
  • Put 2 T of the cheese mixture down the center of a tortilla; spoon some mushroom mixture on top. Fold up "bottom corner" of tortilla then fold sides in and roll seam-side down. Repeat for other wraps. Don't use up all of mushroom mixture - leave a large spoonful.
  • Sprinkle wraps with remaining 1/2 cup cheese and mushroom/shrimp.
  • By the way, this is a lot easier to do than to explain!
