Tuscan Tomato Soup with Garlic Croutons

- small loaf of sliced stale bread rubbed with garlic clove and baked in slow 200 degree oven for 15 min. shopping list
- 3-4 Tbsp. olive oil shopping list
- 4-5 large cloves of garlic, chopped shopping list
- 1/3 - 1/2 cup fresh basil leaves shopping list
- 1 1/2 pounds roasted plum tomatoes (cut in half, drizzle with olive oil and sea salt and bake in high temp oven) shopping list
- 2 cups vegetable stock shopping list
- 1 onion shopping list
How to make it
- In olive oil, cook onion until it's carmelized.
- Add garlic and cook 2 minutes (on low).
- Add basil, reduce heat and add stock.
- Simmer for 2 minutes.
- Add roasted tomatoes, season and cook for 5 minutes
- Serve with croutons and fresh basil leaves.
